Because the interior is pressed rather than coated, food needs to cook through before it releases on its own. That makes it a good fit for searing, flipping, and deglazing, plus dishes like pan-fried potatoes, crispy fish, morning omelettes, and creamy pasta. Preheat it for about 90 seconds and add at least a teaspoon of high smoke point oil before you start cooking.
